Roasted Portobello Dip

- 1 1/2 tbls. olive oil shopping list
- 1lb. Portobello mushrooms, cleaned and chopped shopping list
- 1 1/2 cups onions, chopped (I use Vidalia but any white onion will do) shopping list
- 2-3 cloves garlic, finely chopped shopping list
- 2 8 oz. pkgs. cream cheese, room temperature shopping list
- 1/2 tsp onion powder shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 425
- Put mushrooms on baking sheet and bake for 15 minutes
- In skillet, add onions and garlic and saute until tender
- Let mushrooms and onion mixture cool
- Puree mushrooms, onions, and garlic in food processor until almost smooth
- In mixing bowl add cream cheese, onion powder and blended veggies
- Salt and pepper to taste
- Serve with pita chips, crackers, or veggies
