Fettucini Verde

- 1 1/2 cups unbleached flour shopping list
- 1 cup of whole wheat flour shopping list
- 1 tsp of salt shopping list
- 2 eggs shopping list
- 1 10 ounce package frozen chopped spinach, cooked and well drained shopping list
- 1 1/2 tsp of olive oil shopping list
- 1 tbsp of water shopping list
- 2 cloves of garlic minced shopping list
- 1/2 cup of butter shopping list
- 1 cup whipping cream shopping list
- 1/2 cup of grated parmesan cheese shopping list
How to make it
- In mixing bowl, stir together the flours and salt.
- Make a well in the center.
- Combine eggs, spinach, oil and water, add to flour.
- Mix well. Divide dough in half.
- cover tightly and chill one hour.
- On floured surface roll each hal of dough to a 24 x 12 inch rectangle
- about 1/8 inch thick.
- Cut crosswise inot 1/4 inch strips.
- Spread strips on wire racks and dry for 3 hours.
- To serve, cook pasta in boiling water for 10 minutes, til tender.
- Drain, keep warm.
- Cook garlic in butter until tender.
- Add cream and parmesan cheese.
- Toss with hot pasta, season with salt and pepper to taste.
- Pass with additional grated parmesan cheese and sprinkle with crushed red pepper flakes if desired.
