Homemade spinach noodles, you can do this, if I can. Not hard and the flavor and texture is top notch.

Ingredients
  • 1 1/2 cups unbleached flour
  • 1 cup of whole wheat flour
  • 1 tsp of salt
  • 2 eggs
  • 1 10 ounce package frozen chopped spinach, cooked and well drained
  • 1 1/2 tsp of olive oil
  • 1 tbsp of water
  • 2 cloves of garlic minced
  • 1/2 cup of butter
  • 1 cup whipping cream
  • 1/2 cup of grated parmesan cheese

Directions
  1. In mixing bowl, stir together the flours and salt.
  2. Make a well in the center.
  3. Combine eggs, spinach, oil and water, add to flour.
  4. Mix well. Divide dough in half.
  5. cover tightly and chill one hour.
  6. On floured surface roll each hal of dough to a 24 x 12 inch rectangle
  7. about 1/8 inch thick.
  8. Cut crosswise inot 1/4 inch strips.
  9. Spread strips on wire racks and dry for 3 hours.
  10. To serve, cook pasta in boiling water for 10 minutes, til tender.
  11. Drain, keep warm.
  12. Cook garlic in butter until tender.
  13. Add cream and parmesan cheese.
  14. Toss with hot pasta, season with salt and pepper to taste.
  15. Pass with additional grated parmesan cheese and sprinkle with crushed red pepper flakes if desired.
