Raspberry Onion Marmalade

- 2 lb. onions, red (I have used Vidalia) shopping list
- 1 cup raspberry vinegar shopping list
- 1 cup port wine shopping list
- 1/4 cup blackberry liqueur shopping list
- 1/2 cup honey shopping list
- oil shopping list
How to make it
- Heat oil in a skillet over medium heat
- Add onions and saute until tender
- Add vinegar and wine to deglaze
- Bring mixture to a boil, then turn heat down and simmer until liquid has reduced by half
- Add liqueur and honey
- Simmer until the mixture reaches a marmalade consistency.

Oh, this sounds wonderful and it would be great with roast pork. Have to remember to make this for the holidays. Dad#2 would be so happy, and hubby too.
