One of my favorite ways to eat onions on a sandwich.....Great on turkey

Ingredients
  • 2 lb. onions, red (I have used Vidalia)
  • 1 cup raspberry vinegar
  • 1 cup port wine
  • 1/4 cup blackberry liqueur
  • 1/2 cup honey
  • Oil

Directions
  1. Heat oil in a skillet over medium heat
  2. Add onions and saute until tender
  3. Add vinegar and wine to deglaze
  4. Bring mixture to a boil, then turn heat down and simmer until liquid has reduced by half
  5. Add liqueur and honey
  6. Simmer until the mixture reaches a marmalade consistency.

Oh, this sounds wonderful and it would be great with roast pork. Have to remember to make this for the holidays. Dad#2 would be so happy, and hubby too.
