How to make it

  • In a skillet, saute onion with olive oil until tender
  • Add garlic and turmeric
  • Saute for another minute or 2
  • Add tomato, tomato paste, and chopped pepper
  • Mix well, then add water
  • Add salt and pepper, then eggplant
  • Cover pan and simmer on medium heat for about 10 minutes
  • Serve with dollop of yogurt on top
