Afghan Sauteed Eggplant

- 2 eggplants, peeled and cubed into chunks shopping list
- 1 onion, chopped shopping list
- 1/2 tbls garlic, chopped shopping list
- 1/2 tsp turmeric shopping list
- 1 tomato, chopped shopping list
- 1 tbls tomato paste shopping list
- 1/2 green or red bell pepper, diced shopping list
- 2 cups warm water shopping list
- 2 tbls olive oil shopping list
- salt and pepper to taste shopping list
- plain yogurt to garnish shopping list
How to make it
- In a skillet, saute onion with olive oil until tender
- Add garlic and turmeric
- Saute for another minute or 2
- Add tomato, tomato paste, and chopped pepper
- Mix well, then add water
- Add salt and pepper, then eggplant
- Cover pan and simmer on medium heat for about 10 minutes
- Serve with dollop of yogurt on top
