Nice red velvet cake recipe I got from a co-worker from New Orleans. They have a big crawfish boil every spring and this cake is always in attendance. It's a tad different from the red velvet cake that has cream cheese icing...

Ingredients
  • 1/2 cup Crisco shortening
  • 1 cup sugar
  • 1/2 cup cane syrup
  • 2 eggs
  • 2 cups cake flour
  • 1/4 cup red food coloring
  • 1 cup buttermilk
  • 2 T Hershey's cocoa powder
  • 1 Tab. baking soda
  • 1 Tab. white vinegar
  • 1 Tab. vanilla extract
  • Icing:
  • 1 1/2 cup milk
  • 2Tab. vanilla extract
  • 1 stick butter + 2 sticks margarine
  • 1 cup sugar
  • 1/2 cup cane syrup
  • 8 Tbs. flour

Directions
  1. To make cake, beat sugar, eggs and shortening together. Mix in all remaining ingredients and blend well. Pour into greased and floured 9X13 pan. Bake 35-40 minutes. Cool 10 minutes before removing from pan.
  2. Icing:
  3. Put milk to simmer. Mix sugar and flour together. Add to milk. Stir well. Add cane syrup, butter and margarine. Cook until thickened. Remove from heat. Add vanilla. Place in refrigerator to cool. When cool, pour over cake. Store in refrigerator
