Alligator Pie

A twist on Shepherd's pie. My eldest was given a tape of folk songs by my aunt & uncle. There was a song called "Alligator Pie". He asked if we could have some, so I grabbed one of mom's quick, unnamed, recipe's and the rest is history. Read more (If you know the song, you HAVE to sing it while you eat!) See less
Ingredients
- 1 lb ground chicken (because we all know alligator tastes like chicken!) shopping list
- 1/2 c chopped onion shopping list
- 2 tsp olive oil shopping list
- 1lb cut green beans (fresh or fozen) shopping list
- 2Tbs BBQ sauce shopping list
- 5 servings mashed potatoes shopping list
How to make it
- In a med. skillet, brown ground chicken and onions in olive oil, until chicken is browned and onions are transparent.
- Add green beans and BBQ sauce. Stir until beans are warmed and everything is incorporated.
- Transfer to a casserol dish, spread potatoes over meat and bean mixture, and put in 350 oven for 20 minutes, or until heated through and potatoes are golden brown.
- I have replaced the mashed potatoes with Cornbread....YUM!!
