Rainbow Trout With Green Beans And Almonds

- 4 rainbow trout, butterflied shopping list
- 250g cooked green beans shopping list
- 80g flaked almonds shopping list
- 1 bunch spinach, washed shopping list
- 4 lemons segmented and juiced shopping list
- 4 tblsp vermouth shopping list
- 4 tblsp capers shopping list
- 1/2 bunch parsley chopped shopping list
- 120g butter shopping list
How to make it
- Pan fry the trout skin side down for 3 min or until it is crisp and almost cooked through
- Saute the beans and almonds with a little olive oil until turned a light brown.Add spinach and leave to wilt
- Remove trout from pan and place back on the heat with the butter. When the butter starts to foam
- and turn light brown add the lemon segments,capers, parsley and vermouth, remove from the heat
- Place beans and almonds on plate followed by the trout and pour over the sauce.
