How to make it

  • Pan fry the trout skin side down for 3 min or until it is crisp and almost cooked through
  • Saute the beans and almonds with a little olive oil until turned a light brown.Add spinach and leave to wilt
  • Remove trout from pan and place back on the heat with the butter. When the butter starts to foam
  • and turn light brown add the lemon segments,capers, parsley and vermouth, remove from the heat
  • Place beans and almonds on plate followed by the trout and pour over the sauce.
