Rainbow Trout With Green Beans And Almonds Recipe
A great way to have trout I find a nice Chardonnay goes well with this

Ingredients
  • 4 rainbow trout, butterflied
  • 250g cooked green beans
  • 80g flaked almonds
  • 1 bunch spinach, washed
  • 4 lemons segmented and juiced
  • 4 tblsp vermouth
  • 4 tblsp capers
  • 1/2 bunch parsley chopped
  • 120g butter

Directions
  1. Pan fry the trout skin side down for 3 min or until it is crisp and almost cooked through
  2. Saute the beans and almonds with a little olive oil until turned a light brown.Add spinach and leave to wilt
  3. Remove trout from pan and place back on the heat with the butter. When the butter starts to foam
  4. and turn light brown add the lemon segments,capers, parsley and vermouth, remove from the heat
  5. Place beans and almonds on plate followed by the trout and pour over the sauce.
