Shrimp And Spinach Chowder Recipe
This is a lovely, rich and creamy, filling soup. A keeper! The spinach soup that is the base for this recipe has been posted by Kukla, but this was quite different with the shrimp and potatoes. I can't remember which magazine I got it from.

Ingredients
  • 4 cups chicken broth
  • 3/4 cup minced onion
  • 3/4 cup slivered carrot
  • 8 cloves minced garlic
  • 1 lb red potatoes, cut in small wedges
  • 1/2 tsp pepper
  • 1/4 tsp nutmeg
  • 6 t unsalted butter
  • 1/4 cup flour
  • 1 cup milk
  • 8 cups fresh spinach (I used 2 bags of baby spinach)
  • 1/2 - 1 lb medium shrimp, peeled and deveined
  • 1 cup cream

Directions
  1. Bring broth just to a boil then add next 6 ingredients and simmer for 20 minutes.
  2. Melt butter over low heat; whisk in flour; whisk in milk and cook 2 minutes. Add to soup.
  3. Add shrimp then spinach and cream. Heat through on very low, about 5-10 minutes.
  4. May garnish with red bell pepper curls.
