Spicy Black Bean Corn and Jicama Salad

- 1 15 oz cans black beans shopping list
- 1 15 oz can corn shopping list
- 1 cup jicama, julienned shopping list
- 2 plum tomatoes, seeded and chopped shopping list
- 1 handful cilantro cleaned, dried, and chopped shopping list
- 1 lime, juiced shopping list
- ¼ cup extra virgin olive oil or vegetable oil shopping list
- 2 cloves garlic, chopped shopping list
- 1 jalapeño, chopped shopping list
- 1 teaspoon honey, sugar or Splenda shopping list
- salt, Black and/or red pepper to taste shopping list
How to make it
- Drain and clean the black beans and corn
- Add jicama, tomatoes and cilantro
- In a separate container, mix the remaining ingredients
- Add dressing to salad and chill before serving.
