Ingredients

1 15 oz cans black beans

1 15 oz can corn

1 cup jicama, julienned

2 plum tomatoes, seeded and chopped

1 handful cilantro cleaned, dried, and chopped

1 lime, juiced

¼ cup extra virgin olive oil or vegetable oil

2 cloves garlic, chopped

1 jalapeño, chopped

1 teaspoon honey, sugar or Splenda

Salt, Black and/or red pepper to taste

Directions

Drain and clean the black beans and corn

Add jicama, tomatoes and cilantro

In a separate container, mix the remaining ingredients

Add dressing to salad and chill before serving.

I think these ingredients sound refreshing. I love the black beans and corn but had not thought of adding Jicama.
