Spicy Black Bean Corn And Jicama Salad Recipe
This is a great salad to go along with any Tex-Mex style meal. The cilantro makes this salad very refreshing.

Ingredients
  • 1 15 oz cans black beans
  • 1 15 oz can corn
  • 1 cup jicama, julienned
  • 2 plum tomatoes, seeded and chopped
  • 1 handful cilantro cleaned, dried, and chopped
  • 1 lime, juiced
  • ¼ cup extra virgin olive oil or vegetable oil
  • 2 cloves garlic, chopped
  • 1 jalapeño, chopped
  • 1 teaspoon honey, sugar or Splenda
  • Salt, Black and/or red pepper to taste

Directions
  1. Drain and clean the black beans and corn
  2. Add jicama, tomatoes and cilantro
  3. In a separate container, mix the remaining ingredients
  4. Add dressing to salad and chill before serving.

I think these ingredients sound refreshing. I love the black beans and corn but had not thought of adding Jicama.
