Pasta Salad with Summer Ale Vinaigrette

- 2 red bell peppers, seeded, and roasted shopping list
- 2 zucchini, grilled and diced shopping list
- 2 summer squash, grilled and diced shopping list
- 2 red onions, quartered and grilled shopping list
- 1lb. rotini pasta, cooked according to instructions shopping list
- 1/2 cup olive oil shopping list
- 2 1/2 tbls. cider vinegar shopping list
- 1 1/2 tsp rosemary, dried shopping list
- 2/3 cup summer ale (I use Sam Adams) shopping list
- 1 tsp lemon juice shopping list
- Salt and pepper to taste shopping list
- 1 pinch sugar shopping list
- Grated parmesan and chopped olives for garnish shopping list
How to make it
- In blender, put red peppers, olive oil, cider vinegar, rosemary, beer, lemon juice, salt, pepper and sugar
- Blend until smooth
- Add vegetables to pasta
- Stir in vinaigrette
- Garnish with black olives and parmesan cheese.
