How to make it

  • Peel and parbboil whole onions with ends attached until barely tender. Or, if onions are jumbo, cut in half and stem, cut side down until barely tender.
  • Remove onions and trim ends so onions will sit flat.
  • Scoop out most of inside leaving several layers of shell, reserve scooped out onion.
  • Mince scooped out onion,bell peppers, celery, andouille and garlic and saute in butter until soft.
  • Add a few tablespoons of bread crumbs until mixture holds together.
  • add a dash of sherry.
  • Add breadcrumbs, if necessary to get correct constency.
  • Stuff into onions, dot with butter, top with cheese and bake in 300 degree oven for about 30 minutes. Can be made ahead, refrigerated and baked before serving.
