Stuffed Onions

- 6 large vidallia or sweet onions shopping list
- 2 tbs butter shopping list
- 1 green bell pepper shopping list
- 1 red bell pepper shopping list
- 2 stalks celery shopping list
- 1 lb. Andouillle or other lean sausage of your choice. shopping list
- 1 tbs minced garlic shopping list
- seasoned bread crumbs shopping list
- Sherry shopping list
- Fresh Parmesan, Romano or other cheese, grated shopping list
- salt and pepper to taste shopping list
How to make it
- Peel and parbboil whole onions with ends attached until barely tender. Or, if onions are jumbo, cut in half and stem, cut side down until barely tender.
- Remove onions and trim ends so onions will sit flat.
- Scoop out most of inside leaving several layers of shell, reserve scooped out onion.
- Mince scooped out onion,bell peppers, celery, andouille and garlic and saute in butter until soft.
- Add a few tablespoons of bread crumbs until mixture holds together.
- add a dash of sherry.
- Add breadcrumbs, if necessary to get correct constency.
- Stuff into onions, dot with butter, top with cheese and bake in 300 degree oven for about 30 minutes. Can be made ahead, refrigerated and baked before serving.
