SLOW POKE JAMBALAYA IN THE CROCK POT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Roark Estate in Grand Prairie, Texas in 1984.

Ingredients
  • 1 green bell pepper chopped
  • 1 white onion chopped
  • 2 medium tomatoes chopped
  • 1 cup celery chopped
  • 1 clove garlic crushed
  • 2 tablespoons minced parsley
  • 2 teaspoons chopped thyme leaves
  • 2 teaspoons oregano leaves chopped
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 4 ounces smoked sausage chopped
  • 8 ounces chicken breast chopped
  • 2 cups beef broth
  • 1/2 pound cooked shelled shrimp
  • 1 cup cooked rice

Directions
  1. Shell shrimp and halve lengthwise.
  2. In slow cooker combine all ingredients except shrimp and rice.
  3. Cover and cook on low 10 hours then turn cooker on high and add shrimp and rice.
  4. Cover then cook on high 30 minutes.
