Ingredients
  • 1/3 Cup BUTTER or MARGARINE
  • 1 Cup packed BROWN SUGAR
  • 2/3 Cup unsweetened COCOA POWDER
  • 1 Tbsp INSTANT COFFEE granules
  • 1 tsp BAKING SODA
  • 1 tsp ground CINNAMON
  • 2 ea EGG WHITES
  • 1/3 Cup LOW-FAT VANILLA YOGURT (or SOUR CREAM)
  • 1.5 Cups ALL PURPOSE FLOUR
  • 1/4 Cup granulated SUGAR (or RAW SUGAR)

Directions
  1. Preheat oven to 350. In a large mixing bowl, beat the butter (or margarine) with an electric mixer on medium to high speed about 30 seconds or until softened.
  2. Add the brown sugar, cocoa powder, coffee granules, baking soda, and cinnamon. Beat until combined, scraping sides of bowl occasionally.
  3. Beat in the egg whites and yogurt (or sour cream) until combined.
  4. Beat in as much flour as you can with the mixer and stir in the remaining flour.
  5. Place the granulated (or raw) sugar in a small bowl.
  6. A teaspoon at a time, shape mixture into balls. Then drop into sugar and coat well.
  7. Place 2 inches apart on an ungreased cookie sheet. Bake for 8-10 minutes or until edges are firm. Transfer to wire rack and let cool.
  8. Yields about 40 cookies.

These sound awesome!! I LOVE coffee!!! What happens if you put in whole eggs and not just egg whites??


I'm not to sure. This recipe was given to me by a friend. I would think the the cookies wouldn't be as light and airy if you used whole eggs.
