Cappuccino Crinkles

- 1/3 Cup butter or margarine shopping list
- 1 Cup packed brown sugar shopping list
- 2/3 Cup unsweetened cocoa powder shopping list
- 1 Tbsp instant coffee granules shopping list
- 1 tsp baking soda shopping list
- 1 tsp ground cinnamon shopping list
- 2 ea egg whites shopping list
- 1/3 Cup low-fat vanilla yogurt (or sour cream) shopping list
- 1.5 Cups ALL PURPOSE flour shopping list
- 1/4 Cup granulated sugar (or raw sugar) shopping list
How to make it
- Preheat oven to 350. In a large mixing bowl, beat the butter (or margarine) with an electric mixer on medium to high speed about 30 seconds or until softened.
- Add the brown sugar, cocoa powder, coffee granules, baking soda, and cinnamon. Beat until combined, scraping sides of bowl occasionally.
- Beat in the egg whites and yogurt (or sour cream) until combined.
- Beat in as much flour as you can with the mixer and stir in the remaining flour.
- Place the granulated (or raw) sugar in a small bowl.
- A teaspoon at a time, shape mixture into balls. Then drop into sugar and coat well.
- Place 2 inches apart on an ungreased cookie sheet. Bake for 8-10 minutes or until edges are firm. Transfer to wire rack and let cool.
- Yields about 40 cookies.
