How to make it

  • Preheat oven to 350. In a large mixing bowl, beat the butter (or margarine) with an electric mixer on medium to high speed about 30 seconds or until softened.
  • Add the brown sugar, cocoa powder, coffee granules, baking soda, and cinnamon. Beat until combined, scraping sides of bowl occasionally.
  • Beat in the egg whites and yogurt (or sour cream) until combined.
  • Beat in as much flour as you can with the mixer and stir in the remaining flour.
  • Place the granulated (or raw) sugar in a small bowl.
  • A teaspoon at a time, shape mixture into balls. Then drop into sugar and coat well.
  • Place 2 inches apart on an ungreased cookie sheet. Bake for 8-10 minutes or until edges are firm. Transfer to wire rack and let cool.
  • Yields about 40 cookies.

    I'm not to sure. This recipe was given to me by a friend. I would think the the cookies wouldn't be as light and airy if you used whole eggs.
