Crusty Mustard Pork Loin Recipe
This recipe is one of my husbands. I think he got the idea from a magazine years ago, I just perfected it. This is great with glazed carrots and a nice green veggie.

Ingredients
  • 1-2 lb. pork tenderloin (unseasoned)
  • 1 C. plain bread crumbs
  • 1 tsp. dried, crushed rosemary
  • 1 tsp. garlic powder
  • fresh ground black pepper to taste
  • 1/4 C. Dijon mustard

Directions
  1. Preheat oven to 375 degrees F.
  2. In a large mixing bowl, combine the bread crumbs, rosemary, garlic powder and pepper.
  3. Brush the pork loin with the Dijon mustard, making sure to coat all sides.
  4. Place mustard coated pork loin in the bread crumb mixture and coat well.
  5. Arrange pork loin in a baking pan with a flat rack insert.
  6. Bake at 375 degrees F for approx. 1 hour or until internal temp. reaches at least 165 degrees F.
  7. Let meat rest 10 minutes before slicing into thin pieces and serving.

I have this pork loin in the oven as of 10 mintues ago. Will report back on how my family liked this. Looks great though. Bread crumbs stuck to the mustard well. Need all the mustard that is recommened for this recipe to make a nice thick coating on for the breadcrumbes to stick to the loin. Smells great.
