These are quick, easy and delicious. They're great for that hurry up on the go, get out the door type of meal or sit down with cole slaw, veggies and chips. Either way is great.

Ingredients
  • 1/2 Ib. extra lean ground beef
  • 3/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • l/3 cup milk
  • 1 Tbsp. instant minced onion
  • 6 eggs, slightly beaten
  • 1 cup (4 oz.) shredded Cheddar cheese
  • 4 whole wheat or white pocket breads
  • Sliced tomatoes
  • Fresh alfalfa sprouts

Directions
  1. In large frying pan, cook beef over high heat, stirring, until pinkness is gone. Sprinkle with salt and black pepper. Remove from heat.
  2. Mix together milk and onion. Combine with the eggs. Place pan over medium heat. Stir egg mixture into beef, stirring to scramble.
  3. When eggs begin to set, stir in cheese. Continue cooking until cheese melts and eggs are set.
  4. Cut pocket breads into halves. Place about 1/3 cup of the hot mixture into each pocket. Add tomato slice and alfalfa sprouts.
  5. Serve 2 filled halves per person.
