Lemon Bread

I didn't want to try this because of margarine as an ingredient...I'm so happy that I finally tried it..This is an easy and delicious bread for lemon lovers.....From the Red Lion Inn Cookbook
Ingredients
- 3/4 cup margarine shopping list
- 2 cups sugar shopping list
- 3 eggs shopping list
- 1 egg yolk shopping list
- 3 1/2 cups flour shopping list
- 1 tbls. plus 1/2 tsp. baking powder shopping list
- 1 1/2 tsp. salt shopping list
- 2 cups lemon pudding, prepared shopping list
- 3 tbls milk shopping list
How to make it
- Preheat oven to 350
- Grease two loaf pans
- In mixing bowl, mix margarine and sugar with hand mixer
- Add eggs, one at a time, mixing well after each addition
- Sift dry ingredients
- Add to egg mixture
- Add lemon pudding and milk, and mix until well blended
- Pour batter into loaf pans
- Bake for 40-50 minutes until wooden pick inserted in the center comes out clean
- * I love this with raspberry preserves*
