Lemon Tiramisu

- syrup shopping list
- 3/4c water shopping list
- 1/4c sugar shopping list
- 1/3c lemon juice or frozen concentrated lemonade shopping list
- FILLING shopping list
- 3-4 lemons shopping list
- 11/2c sugar shopping list
- 2T cornstarch shopping list
- 4 egg yolks, beaten shopping list
- 2c heavy cream shopping list
- 4c mascarpone cheese or cream cheese shopping list
- ladyfingers shopping list
- fresh berries (optional) shopping list

How to make it
- SYRUP:
- Stir water and sugar together in a saucepan, bring to a boil.
- Remove from heat, add the lemon juice. Cool to room temperature.
- FILLING:
- Grate peel from lemons and squeeze out juice. Measure out 2T peel and 1cup of juice. Stir 1cup of sugar with cornstarch in a thick bottomed pot. Whisk in juice, peel and egg yolks. Cook until thick but do not boil. Cover with directly with cling wrap to prevent skin forming. Cool. In a large bowl beat mascarpone cheese with remaining 1/2cup of sugar. Fold in cooled lemon and egg mixture.
- Beat heavy cream to soft peaks and fold gently into cheese mixture.
- ASSEMBLY:
- Line bottom of shallow serving dish with ladyfingers, brush with syrup. Spread with half of the lemon cheese mixture. Repeat.
- Cover and refrigerate for at least 4 hours. Garnish with berries.
