Coffee Mallow Pie Recipe

For my foodie friends that like coffee (shudder). Saw this in one of my little cooking magazines from eons ago, thought you might like it...(shudder again). Chill 3 hours before serving.

Ingredients
- 1 c water
- 1 T instant coffee
- 4 c minature marshmallows
- 1 T butter
- 1 c heavy whipping cream, whipped
- 1 9" pastry shell, baked
- 1/2 c toasted walnuts or pecans
- Additional whipped cream and chocolate curls for garnish
- Large bowl filled with ice (saucepan should fit on this)
Directions
- In a heavy saucepan, bring water to a boil; stir in coffee until dissolved
- Reduce heat and add marshmallows and butter
- Cook and stir over low heat until marshmallows are melted and mixture is smooth.
- Set saucepan in ice and whisk mixture constantly until cooled
- Fold in whipped cream
- Spoon into pastry shell
- Sprinkle with toasted nuts
- Chill for 3 hours
- Garnish with chcolate curls and additional whipped cream just before serving.
