Grilled Pancetta Wrapped Asparagus

- 1 lb. medium asparagus(1/2" thick;12-15 shopping list
- 1Tbs extra-virgin olive oil shopping list
- 12-15 thin slices pancetta(1/4 lb) shopping list
- 4(12"0 wooden skewers,soaked in water 30 mins shopping list
How to make it
- Prepare grill for direct-heat cooking over med hoat coal
- Trim asparagus to 6" long,toss with oil and 1/4tsp pepper in small dish. Wrap middle of each asparagus spear with one slice of pancetta. Tread 3 or 4 wrapped asparagus 1/2" apart onto each skewer.
- Oil grill rack,then grill asparagus,uncovered,turning,until pancetta is golden brown in spots and asparagus is crisp tender,about 6 mins
- If you aren't able to grill outdoors,they can be broiled 3' from the heat,turning,about 5 mins. Asparagus can be wrapped in pancetta 1 day ahead and chilled!

I'm a huge fan of both pancetta and asparagus, but never thought of pairing them together. This sounds awesome and I can't wait to make this.
