How to make it

  • 1 hour before cooking, take salmon from refrigerator. Rinse and pat dry. Remove any pin bones with a tweezers. Put the salmon on a double layer of large aluminum foil sheets. Close it on three sides. Add the “martini”. Close the foil tightly. Let stand for 1 hour.
  • Prepare a wood fire for indirect cooking.
  • Cook the salmon for 30 minutes with foil closed. Carefully open the top. Let the salmon cook for 10-15 minutes longer until sauce reduces. Serve the salmon with the thickened sauce. If the sauce has become too thick, melt an additional tablespoon of butter over salmon.
