A Luscious Chocolate Bundt Cake

- 2 sticks unsalted butter, softened shopping list
- 3 cups granulated sugar shopping list
- 6 large eggs shopping list
- 2-1/2 cups all purpose flour shopping list
- 1/2 cup quality cocoa shopping list
- 1/2 teaspoon soda shopping list
- 1/4 teaspoon salt shopping list
- 1 cup sour cream shopping list
- 3 teaspoons quality vanilla extract shopping list
- THE icing DIVINE shopping list
- 1 16 ounce package chocolate chips shopping list
- 2 sticks unsalted butter, cut into pieces shopping list
- 1/2 cup heavy whipping cream shopping list
- 2-1/2 cups powdered sugar shopping list
- 1 tablespoon freshly grated orange rind, OPTIONAL shopping list
- THE HEAVENLY whipped cream shopping list
- 1 cup heavy whipping cream that is very cold shopping list
- 1/4 cup sifted powdered sugar shopping list
- 1-1/2 teaspoons quality vanilla extract shopping list
How to make it
- In large mixing bowl, with an electric mixer, cream softened butter until light and creamy
- Add sugar gradually and beat for about 5 minutes
- Add vanilla, mixing well
- Add eggs, one at a time, beating after each addition
- In bowl, or waxed paper funnel, place flour, cocoa, soda, and salt
- Starting with dry ingredients, add alternately with sour cream, ending with the dry ingredients (I do this in thirds)
- Place batter into a greased and lightly floured Bundt pan
- Place in a 300 degree oven, bake for 1 hour and 15 minutes
- After cake is done, turn oven off, leave in oven with door closed for about 5 minutes
- Remove cake, place on wire rack to cool for about 10 minutes
- Remove cake from pan carefully onto cake plate
- THE ICING DIVINE
- Combine chocolate chips, heavy cream, the cut butter in saucepan
- Melt, stirring constantly
- Remove from heat, pour in bowl, cool to room temperature
- Add powdered sugar, beat until smooth
- Add the orange rind last if using
- THE HEAVENLY WHIPPED CREAM
- Combine all ingredients in a bowl, beat until stiff peaks are formed
- Refrigerate until ready to use.
- MAY SERVE CAKE PLAIN, WITH ICING, WITH WHIPPED CREAM
- BOTH ICING AND A DOLLOP OF WHIPPED CREAM IS ABSOLUTELY HEAVENLY AND OVER THE TOP
