Ingredients
  • 2 sticks unsalted butter, softened
  • 3 cups granulated sugar
  • 6 large eggs
  • 2-1/2 cups all purpose flour
  • 1/2 cup quality cocoa
  • 1/2 teaspoon soda
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 3 teaspoons quality vanilla extract
  • THE ICING DIVINE
  • 1 16 ounce package chocolate chips
  • 2 sticks unsalted butter, cut into pieces
  • 1/2 cup heavy whipping cream
  • 2-1/2 cups powdered sugar
  • 1 tablespoon freshly grated orange rind, OPTIONAL
  • THE HEAVENLY WHIPPED CREAM
  • 1 cup heavy whipping cream that is very cold
  • 1/4 cup sifted powdered sugar
  • 1-1/2 teaspoons quality vanilla extract

Directions
  1. In large mixing bowl, with an electric mixer, cream softened butter until light and creamy
  2. Add sugar gradually and beat for about 5 minutes
  3. Add vanilla, mixing well
  4. Add eggs, one at a time, beating after each addition
  5. In bowl, or waxed paper funnel, place flour, cocoa, soda, and salt
  6. Starting with dry ingredients, add alternately with sour cream, ending with the dry ingredients (I do this in thirds)
  7. Place batter into a greased and lightly floured Bundt pan
  8. Place in a 300 degree oven, bake for 1 hour and 15 minutes
  9. After cake is done, turn oven off, leave in oven with door closed for about 5 minutes
  10. Remove cake, place on wire rack to cool for about 10 minutes
  11. Remove cake from pan carefully onto cake plate
  12. THE ICING DIVINE
  13. Combine chocolate chips, heavy cream, the cut butter in saucepan
  14. Melt, stirring constantly
  15. Remove from heat, pour in bowl, cool to room temperature
  16. Add powdered sugar, beat until smooth
  17. Add the orange rind last if using
  18. THE HEAVENLY WHIPPED CREAM
  19. Combine all ingredients in a bowl, beat until stiff peaks are formed
  20. Refrigerate until ready to use.
  21. MAY SERVE CAKE PLAIN, WITH ICING, WITH WHIPPED CREAM
  22. BOTH ICING AND A DOLLOP OF WHIPPED CREAM IS ABSOLUTELY HEAVENLY AND OVER THE TOP
