How to make it

  • First four ingredients make the crumb crust.
  • Simply combine and press into 26cm spring form pan and chill while making filling.
  • Beat cream cheese, sugar and cream in bowl until thickened.
  • Scrape down sides frequently.
  • Add Baileys, choc chips and almond essence to taste.
  • Spoon into pan and decorate as desired.
  • I used Chocolate curls and kiwifruit and it was devine.
  • Chill for at least 2 hours.

    In NZ a nip is the single amount you would get in a glass if you bought a drink from the local hotel. Hope that makes a bit more sense. You could always just use a capful ( x8 ) Truly is worth trying as it tastes delish!

    Not to be stupid... but how much is a "nip"? I'm thinking not a jigger or hey, I'll just drink this cake and be happy, but I just don't know how much you mean.
