How to make it

  • Soak rice for 3-6 hours then drain well and cook according to package directions then cool to room temperature.
  • When rice is ready finely chop the onion, tomatoes and peppers and grate the coconut.
  • Mix together in a large bowl and add in the rice.
  • In a separate bowl mix the almond yogurt, lime juice, lime zest, garlic, spices and seasoning.
  • Pour over the wild rice and vegetables and toss well.
