Ingredients
  • 1 cup wild rice
  • 1 medium white onion chopped
  • 2 large tomatoes
  • 2 large red bell peppers
  • 2 large yellow bell peppers
  • 1-1/2 cups freshly grated coconut
  • 2/3 cup almond yogurt
  • 2 teaspoons chili powder
  • 4 garlic cloves minced
  • 2 teaspoons ground coriander
  • 1 teaspoon ground brown mustard
  • 2 teaspoons lime zest
  • 1 lime juiced
  • 1 teaspoon sea salt

Directions
  1. Soak rice for 36 hours.
  2. When rice is ready finely chop the onion, tomatoes and peppers and grate the coconut.
  3. Mix together in a large bowl and add in the rice.
  4. In a separate bowl mix the almond yogurt, lime juice, lime zest, garlic, spices and seasoning.
  5. Pour over the wild rice and vegetables and toss well.
