Caribbean Wild Rice

- 1 cup wild rice shopping list
- 1 medium white onion chopped shopping list
- 2 large tomatoes shopping list
- 2 large red bell peppers shopping list
- 2 large yellow bell peppers shopping list
- 1-1/2 cups freshly grated coconut shopping list
- 2/3 cup almond yogurt shopping list
- 2 teaspoons chili powder shopping list
- 4 garlic cloves minced shopping list
- 2 teaspoons ground coriander shopping list
- 1 teaspoon ground brown mustard shopping list
- 2 teaspoons lime zest shopping list
- 1 lime juiced shopping list
- 1 teaspoon sea salt shopping list
How to make it
- Soak rice for 3-6 hours then drain well and cook according to package directions then cool to room temperature.
- When rice is ready finely chop the onion, tomatoes and peppers and grate the coconut.
- Mix together in a large bowl and add in the rice.
- In a separate bowl mix the almond yogurt, lime juice, lime zest, garlic, spices and seasoning.
- Pour over the wild rice and vegetables and toss well.
