Ingredients
  • Brine
  • 6 C water
  • 1/4 C kosher salt
  • 1/4 C firmly packed brown sugar
  • 1 Tbl grated orange peel
  • Chops
  • 4 (1 1/4 inch thick) bone-in pork chops
  • 1 Tbl brown sugar
  • 1 tsp crushed dried rosemary leaves
  • 1/2 tsp dried sage leaves
  • 1/2 tsp marjoram
  • 1/4 tsp garlic powder
  • 1/8 tsp ground red pepper (cayenne)

Directions
  1. Combine all Brine ingredients in a non-reactive bowl and mix well
  2. Place chops in a resealable freezer bag and add brine
  3. Marinate in refrigerator 6 - 8 hours
  4. In a small bowl combine all remaining ingredients; mix well and set aside
  5. Heat grill
  6. Remove chops from brine; discard brine
  7. Pat pork chops dry with paper towels
  8. Rub brown sugar-herb mixture on both sides of chops
  9. Grill over medium high heat for 20 - 25 minutes or until no longer pink in center, turning once

Yummy, those look wonderful! I need a different way to do pork chops so I am trying this one on Thursday.
