Orange Brined Pork Chops With Herb Rub

- Brine shopping list
- 6 C water shopping list
- 1/4 C kosher salt shopping list
- 1/4 C firmly packed brown sugar shopping list
- 1 Tbl grated orange peel shopping list
- Chops shopping list
- 4 (1 1/4 inch thick) bone-in pork chops shopping list
- 1 Tbl brown sugar shopping list
- 1 tsp crushed dried rosemary leaves shopping list
- 1/2 tsp dried sage leaves shopping list
- 1/2 tsp marjoram shopping list
- 1/4 tsp garlic powder shopping list
- 1/8 tsp ground red pepper (cayenne) shopping list
How to make it
- Combine all Brine ingredients in a non-reactive bowl and mix well
- Place chops in a resealable freezer bag and add brine
- Marinate in refrigerator 6 - 8 hours
- In a small bowl combine all remaining ingredients; mix well and set aside
- Heat grill
- Remove chops from brine; discard brine
- Pat pork chops dry with paper towels
- Rub brown sugar-herb mixture on both sides of chops
- Grill over medium high heat for 20 - 25 minutes or until no longer pink in center, turning once
