How to make it

  • Combine all Brine ingredients in a non-reactive bowl and mix well
  • Place chops in a resealable freezer bag and add brine
  • Marinate in refrigerator 6 - 8 hours
  • In a small bowl combine all remaining ingredients; mix well and set aside
  • Heat grill
  • Remove chops from brine; discard brine
  • Pat pork chops dry with paper towels
  • Rub brown sugar-herb mixture on both sides of chops
  • Grill over medium high heat for 20 - 25 minutes or until no longer pink in center, turning once
