Vegetable Spaghetti

- 1/2 pound whole wheat spaghetti shopping list
- 3 carrots shopping list
- 3 green zucchini shopping list
- 3 yellow zucchini shopping list
- 1 tablespoon olive oil shopping list
- 1 tablespoon butter shopping list
- 2 cloves garlic minced shopping list
- 1-1/2 cups packed fresh basil minced shopping list
- 3/4 cup parsley minced shopping list
- 1/2 cup fresh chives minced shopping list
- 2 tablespoons fresh marjoram minced shopping list
- 3/4 teaspoon salt shopping list
- 1/2 cup grated parmesan cheese shopping list
How to make it
- Bring a large pot of salted water to a boil over high heat then cook spaghetti for 12 minutes.
- Drain thoroughly.
- Peel carrots then cut carrots and zucchini into long thin julienne strips.
- In a large skillet heat oil and butter over low heat then add garlic and carrots and sauté 7 minutes.
- Add spaghetti, zucchini, basil, parsley, chives, marjoram and salt.
- Stir to combine and cook 5 minutes then remove from heat and place in serving bowl.
- Sprinkle with parmesan cheese then toss to combine and serve immediately.
