How to make it

  • Bring a large pot of salted water to a boil over high heat then cook spaghetti for 12 minutes.
  • Drain thoroughly.
  • Peel carrots then cut carrots and zucchini into long thin julienne strips.
  • In a large skillet heat oil and butter over low heat then add garlic and carrots and sauté 7 minutes.
  • Add spaghetti, zucchini, basil, parsley, chives, marjoram and salt.
  • Stir to combine and cook 5 minutes then remove from heat and place in serving bowl.
  • Sprinkle with parmesan cheese then toss to combine and serve immediately.
