Simple Mexican Rice Recipe

Ingredients
  • Olive Oil
  • 1 cup Basmati White Rice
  • 1-1/2 cups Water
  • 1 teaspoon minced Garlic
  • 1/2 cup Salsa (I use Pace Thick & Chunky in Medium)
  • 1 teaspoon Sabor con Pollo (chicken boullion granules)

Directions
  1. Heat about 1 tablespoon of olive oil in a saucepan.
  2. Add rice and garlic, coat with oil and cook about 5 minutes until rice is opaque. Stirring frequently.
  3. Sprinkle Sabor con Pollo over rice, do not stir!
  4. Pour in water and salsa, do not stir!
  5. Bring to a boil, then cover and reduce heat. Simmer 25 minutes.
  6. Fluff after cooking is complet.

I have never been entirely satisfied with my Mexican rice so will give this a try. I love the Basmati rice but never thought to try it for Mexican dishes.
