A very pretty addition to any summer meal. Not the usual vegetable combination. Recipe and photo from Great Grilling 2002

Ingredients
  • 1 large zucchini, thinly slice
  • 1 lrg summer squash, quartered
  • 1 carrot, peeled and thinly sliced
  • 1/4 C very thinly sliced red onion, separated into rings
  • 4 radishes, thinly sliced
  • 2/3 C purchased Greek vinaigrette dressing

Directions
  1. In a large bowl combine all ingredients; toss to combine
  2. Cover and refrigerate 4 hours or overnight before serving
