Ingredients
  • 1 to 2 lbs. Loin Chops
  • 3 limes
  • 1/2 cup coconut milk, canned
  • 1/4 tps. salt
  • 1/8 tps. cayenne pepper, ground
  • 4 green onions, minced
  • 1/2 cup fresh cilantro, minced

Directions
  1. 1. Preheat grill to med.-hot. Squeeze juice of one lime over pork chops. Let set 5-8 minutes.
  2. 2. Warm coconut milk in small saucepan over low heat, season with and cayenne. Add juice of second lime to sauce. Keep warm
  3. 3. Grill chops over indirect heat, turning once, 8 to 10 minutes or until done. Transfer to serving platter.
  4. 4. Spoon sauce over chops. Garnish with scallions and cilantro, and sprinkle with juice from third lime.
