Aioli Garlic Mayonnaise Recipe
I use this as an accompaniment to most of my Tapas recipes. You can do this by hand, food processor, or hand mixer.

Ingredients
  • 4-8 cloves garlic
  • 1/2 tsp sea salt
  • 2 egg yolks
  • 1 tbsp white wine vinegar
  • 1 1/4 cups olive oil

Directions
  1. Crush the garlic cloves with the salt, then place in a bowl and stir in the egg yolks and vinegar.
  2. Gradually beat in the oil, a little at a time, beating well after each addition until thick and glossy.
  3. Season to taste.
  4. Store for up to 5 days in the fridge.
