How to make it

  • Cook carrots in boiling water until tender
  • Place in ice water
  • Drain
  • Heat oil in a large skillet
  • Put carrots in pan and sear until lightly brown
  • Add butter and brown sugar
  • Cook until sugar melts and becomes caramelized
