Chicken and Rice Bake

- 1 broiler/fryer chicken (3 1/2-4lb) - Or, I have used 6 chicken thighs shopping list
- 1/4 to 1/3 cup all purpose flour shopping list
- 2 tbls vegetable or canola oil shopping list
- 2 1/3 cups H20 (water!) shopping list
- 1 1/2 cups uncooked long grain rice shopping list
- 1 cup milk shopping list
- 1 tsp salt shopping list
- 1 tsp poultry seasoning ( I have also used italian seasoning) shopping list
- Crazy Janes Mixed up salt (1/2 tsp) shopping list
- 1/2 tsp pepper shopping list
- Chopped fresh parsley shopping list
How to make it
- Dredge chicken pieces in flour. In a large skillet, brown chicken on all sides in oil over medium heat
- In a large bowl, combine the next seven ingredients. Pour into a greased 13x9x2 in baking dish. Top with chicken
- Cover lightly with foil, and bake for 55 minutes or until rice and chicken are tender
- Eat and enjoy!
