Apricot Cranberry Nut Bread Recipe
This recipe is delicious. It's a take on the ever popular Date and Nut Loaf. I prefer to serve it the next day as the flavors and texture are better.

Ingredients
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • Note: You may want to add a little more as the cranberries add tartness.
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup diced dried apricots
  • 3/4 cup chopped cranberries
  • 1/2 cup coarsely chopped walnuts
  • 2 eggs, lightly beaten
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 tsp. orange / lemon peel, grated

Directions
  1. Grease a 9 x 5 inch Pyrex loaf dish.
  2. In a large bowl, stir flour, sugar, baking powder, and salt together.
  3. Add apricots, cranberries, and walnuts.
  4. Toss gently until fruit is coated.
  5. In small bowl, combine eggs, milk, melted butter, and grated orange / lemon peel.
  6. Pour over dry ingredients and stir just until dry ingredients are moistened.
  7. Do not over mix.
  8. Pour into a greased Pyrex loaf dish, and bake at 350 degrees F for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for approximately 10 minutes, and finish cooling on rack.
