Ingredients
  • 1 box Au Gratin potato mix (cheese sauce mix included)
  • 1 can chicken broth (regular size 10 - 10 1/2 ounces, not large)
  • 3 cups water
  • 2/3 cup diced carrots
  • 2/3 cup diced celery
  • 1/2 cup light cream

Directions
  1. In a large saucepan, mix together the potato slices and cheese sauce mix from the au gratin potato package, along with the chicken broth, water, carrots and celery (everything EXCEPT the cream).
  2. Stir occasionally while bringing to a boil.
  3. Reduce heat to medium low or low (depends upon your burners).
  4. Cover and simmer 25-30 minutes.
  5. Stir occaisionally during cook time .
  6. Soup is done when potatoes are tender.
  7. Remove from heat and stir in cream.

Now that's interesting! My husband makes his instant mashed spuds all the time and often puts too much liquid. I tease him that he's making potato soup (which is his favourite) but I never really thought about him making it that way! It's great that he can make a couple of bowls that easily for himself! Great post! Thank you!


Another great winter recipe I love soup


I love something that is simple like this.. I also make a soup out of Hambuger Helper! I think your like me.. quick is good! As there are only 2 of us.. this is great for a meal!
