A special gift - actually made in the sunshine! You've heard of "sun tea" now there is "Sun Preserves". Prep time does not include "sun" time.

Ingredients
  • 1/2 cup hot water
  • 2 lbs sugar
  • 2 lbs strawberries, cleaned and hulled
  • cheesecloth
  • paraffin
  • sterilized jars

Directions
  1. Combine water and sugar in large, heavy saucepan; boil and stir until sugar is dissolved.
  2. Add strawberries and simmer for 2 minutes
  3. Pour berries and syrup into large shallow pans and cover with cheesecloth.
  4. Place the pans in the sun for 3 or 4 days on a sunporch or outside.
  5. When berries are deep red and syrup is gelled, pack in sterilized jars.
  6. Cover with thin layer of paraffin
