How to make it

  • Put oil in hot pan and begin sauteing the onions until they become transparent. Make sure they do not burn or become too brown.
  • Add the mushrooms. Saute until reduced to almost half.
  • Add spinache and heat through.
  • Remove from heat and stir in ricotta cheese.
  • Season with salt and pepper to taste.
