How to make it
- Put oil in hot pan and begin sauteing the onions until they become transparent. Make sure they do not burn or become too brown.
- Add the mushrooms. Saute until reduced to almost half.
- Add spinache and heat through.
- Remove from heat and stir in ricotta cheese.
- Season with salt and pepper to taste.
