Mushroom Ravioli Stuffing Recipe
This is my own version of a mushroom stuffing for raviols that i found in a cookbook by Giada. It tastes really good and my family loved it. Goes really well with rosee sauce.

Ingredients
  • 3 cups finely chopped mixed mushrooms
  • 1/2 an onion finely chopped
  • 1 package frozen spinach, thawed
  • 1/3 cup ricotta cheese
  • 2 tbsp garlic infused olive oil
  • salt and pepper to taste

Directions
  1. Put oil in hot pan and begin sauteing the onions until they become transparent. Make sure they do not burn or become too brown.
  2. Add the mushrooms. Saute until reduced to almost half.
  3. Add spinache and heat through.
  4. Remove from heat and stir in ricotta cheese.
  5. Season with salt and pepper to taste.
