Mushroom Ravioli Stuffing

This is my own version of a mushroom stuffing for raviols that i found in a cookbook by Giada. It tastes really good and my family loved it. Goes really well with rosee sauce.
Ingredients
- 3 cups finely chopped mixed mushrooms shopping list
- 1/2 an onion finely chopped shopping list
- 1 package frozen spinach, thawed shopping list
- 1/3 cup ricotta cheese shopping list
- 2 tbsp garlic infused olive oil shopping list
- salt and pepper to taste shopping list
How to make it
- Put oil in hot pan and begin sauteing the onions until they become transparent. Make sure they do not burn or become too brown.
- Add the mushrooms. Saute until reduced to almost half.
- Add spinache and heat through.
- Remove from heat and stir in ricotta cheese.
- Season with salt and pepper to taste.
