Turtle Corn

- 3 cups sugar shopping list
- 1 cup water shopping list
- 1 cup molasses, light unsulphered shopping list
- 6 tablespoons unsalted butter shopping list
- 4 tablespoons cider vinegar shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon baking soda shopping list
- 4 quarts popcorn, popped shopping list
- 1 pound pecan halves shopping list
- 6 ounces chocolate chips, melted shopping list
How to make it
- Combine sugar, water, molasses, butter, vinegar and salt in a heavy (tall) saucepan. Cook over medium high heat to 260 degrees on a candy thermometer or until a small amount forms a hard ball when dropped in ice water.
- Remove from heat and stir in baking soda. Mixture will bubble up and then turn creamy (this is why you need a LARGE pot so it doesn't boi over!). Pour over mixed popcorn and pecans in large kettle (I use canning kettle or crab pot) and stir well to coat.
- Spread on lightly greased cookie sheet (or two) thinly and cool completely. Break into pieces with knife and drizzle with 1/2 the melted chocolate. Let dry - turn over and drizzle with the remaining chocolate. Let dry and store in airtight container.
