Turtle Corn Recipe

Ingredients

3 cups sugar

1 cup water

1 cup molasses, light unsulphered

6 tablespoons unsalted butter

4 tablespoons cider vinegar

1 teaspoon salt

1 teaspoon baking soda

4 quarts popcorn, popped

1 pound pecan halves

6 ounces chocolate chips, melted

Directions

Combine sugar, water, molasses, butter, vinegar and salt in a heavy (tall) saucepan. Cook over medium high heat to 260 degrees on a candy thermometer or until a small amount forms a hard ball when dropped in ice water.

Remove from heat and stir in baking soda. Mixture will bubble up and then turn creamy (this is why you need a LARGE pot so it doesn't boi over!). Pour over mixed popcorn and pecans in large kettle (I use canning kettle or crab pot) and stir well to coat.

Spread on lightly greased cookie sheet (or two) thinly and cool completely. Break into pieces with knife and drizzle with 1/2 the melted chocolate. Let dry - turn over and drizzle with the remaining chocolate. Let dry and store in airtight container.
