In bowl of food processor grind the following until the pecans are finely ground.

Ingredients
  • 1/2 cup pecans
  • 1-1/3 cup flour
  • 2 Tblsp sugar
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 tsp (or to taste) cinnamon
  • Remove to a bowl and add:
  • 1/4 cup melted butter
  • 2 large eggs lightly beaten
  • 1-1/2 cups very fresh club soda

Directions
  1. Blend only until dry ingredients are moistened--batter will be lumpy.
  2. Bake in oiled waffle iron using 1/2 cup batter per waffle.
  3. Serve with PURE maple syrup.
