Chili Mashed Potatoes Recipe

Ingredients

1 and 1/3 pounds (4 medium boiling potatoes) peeled and cut in chunks

1/2 cup sour cream

1/4 to 1/3 cup milk

1/3 cup green onion or chives, minced

2 tsp. Chili Powder

Salt and Pepper, to taste

1/2 to 1 cup, Cheddar Cheese (OR) cheese of choice, grated

3 Tbsp Cilantro, chopped (optional)

Directions

In medium saucepan cook potatoes in 2 to 3 inches of boiling water,

covered, about 12 minutes, until tender; drain thoroughly

Mash potatoes with potato masher or electric mixer.

Add sour cream, green onions, milk and chili powder

Mix in salt and pepper. (DO NOT overbeat) !

Stir gently over low heat just till heated through.

Serve topped with cheese, allow to melt on top, and cilantro
