I just found this in my email box, its from Fruits & Veggies More Matters. It sure looks good. I bet Strawberries would be good in place of cherries until they come into season!

Ingredients
  • Dressing
  • 1/3 cup orange juice
  • 2 tbs olive oil
  • 2 tbs honey
  • 1/2 tsp salt
  • ground black pepper to taste

  • 1 bag baby spinach or mixed greens
  • 3 cups sweet cherries, pits removed
  • 2 cups sliced English cucumber
  • 1/2 finely diced red onion

Directions
  1. Wisk together orange juice, oil, honey, salt and pepper; set aside.
  2. In a large bowl, combine salad ingredients.
  3. Toss with salad dressing and serve immediately.

Alright, I tried this, but with a few alterations. First, I used a flax seed and vegetable oil since I didn't have olive oil on hand. Also, I replaced the cherries with cranberries and added walnuts. Yum!
