Broccoli Frittata

- 16oz broccoli shopping list
- 1/4 cup olive oil shopping list
- 8oz fresh mushrooms shopping list
- 2 cloves garlic shopping list
- 3/4 tsp black pepper shopping list
- Dash oregano, opt. shopping list
- 7 eggs shopping list
- 1/2 cup fresh parmesan cheese shopping list
- 1/2 cup Monterey Jack or Swiss shopping list
How to make it
- While broccoli cooks till partially done - still crisp, slice mushrooms, mince garlic, and grate cheese.
- Heat oven to 350.
- Cut broccoli into bite-sized pieces.
- Heat oil in a 10" skillet. Add broccoli, mushrooms, and garlic; cover and steam for 3 minutes.
- The original recipe said to cook this in an oven-going skillet, but I poured it into a sprayed casserole dish at this point.
- Lightly beat eggs; add seasonings. Pour over vegetables.
- Sprinkle with Parmesan and bake 25-30 minutes or until set.
- Sprinkle with other cheese and let sit for 5 minutes.
