Ingredients
  • 1/3 cup chopped onion
  • 2 tsp minced garlic
  • 2 Tbs olive oil
  • 1, 10 oz pkg frozen lima beans, thawed
  • 1/4 cup water
  • 1/4 cup sour cream
  • 2 Tbs fresh chopped parsley
  • 1 tsp fresh lime juice
  • 1/8 to 1/4 tsp curry powder

Directions
  1. Cook onion and garlic in oil for 2 minutes in pan to soften over medium heat.
  2. Add beans and 1/4 cup water.
  3. Cover and simmer 12 to 15 mins until beans are tender
  4. Puree beans and remaining ingredients in food processor. or blender.
  5. Chill for 2 hours before serving
  6. Serve with chips, crackers, veges etc.
  7. Makes 1 1/3 cups.
  8. May multiply recipe as needed
