Dip De Lima

- 1/3 cup chopped onion shopping list
- 2 tsp minced garlic shopping list
- 2 Tbs olive oil shopping list
- 1, 10 oz pkg frozen lima beans, thawed shopping list
- 1/4 cup water shopping list
- 1/4 cup sour cream shopping list
- 2 Tbs fresh chopped parsley shopping list
- 1 tsp fresh lime juice shopping list
- 1/8 to 1/4 tsp curry powder shopping list
How to make it
- Cook onion and garlic in oil for 2 minutes in pan to soften over medium heat.
- Add beans and 1/4 cup water.
- Cover and simmer 12 to 15 mins until beans are tender
- Puree beans and remaining ingredients in food processor. or blender.
- Chill for 2 hours before serving
- Serve with chips, crackers, veges etc.
- Makes 1 1/3 cups.
- May multiply recipe as needed
