How to make it

  • In large skillet melt butter over medium heat.
  • Add onions and sauté until translucent then add curry and chili powder and cook 5 minutes longer.
  • Add apples and half the stock and bring to a boil.
  • Transfer to a large soup pot and season with salt and pepper.
  • Bring to a boil then reduce heat and simmer 45 minutes stirring occasionally.
  • Puree mixture with hand blender until smooth.
  • Add remaining stock and cream then simmer to heat through.
