Spiced Apple Soup

- 3 tablespoons unsalted butter shopping list
- 1 large white onion chopped shopping list
- 2 tablespoons curry powder shopping list
- 1 teaspoon chili powder shopping list
- 7 large granny smith apples peeled cored and diced shopping list
- 5 cups chicken stock divided shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons freshly ground black pepper shopping list
- 1/2 cup heavy whipping cream shopping list
How to make it
- In large skillet melt butter over medium heat.
- Add onions and sauté until translucent then add curry and chili powder and cook 5 minutes longer.
- Add apples and half the stock and bring to a boil.
- Transfer to a large soup pot and season with salt and pepper.
- Bring to a boil then reduce heat and simmer 45 minutes stirring occasionally.
- Puree mixture with hand blender until smooth.
- Add remaining stock and cream then simmer to heat through.
