Spanish Casserole Recipe
This is a good dish with a Spanish theme and it good any time meal. We love this with a good veggie salad

Ingredients
  • 1-1/2 lb. lean ground beef
  • 1 can cream of chicken soup
  • 2 cans sliced black olives
  • 1 bag each Cheddar and mozzarella cheese
  • 1 large can enchilada sauce
  • 2 tsp.. garlic powder
  • 12 tortillas
  • 1/2 cup chopped onion
  • 2 tsp. cornstarch

Directions
  1. Preheat the oven to 300*F.
  2. In skillet brown the beef and drain.
  3. Add soup, enchilada sauce and garlic.
  4. Add the cornstarch and mix until sauce is a little thick. Add onions
  5. Let simmer in skillet.
  6. meanwhile take 6 tortillas and tare up.
  7. Place in bottom of casserole dish.
  8. Add a ladle full of sauce on top of tortillas.
  9. Layer with some cheese and olives.
  10. Repeat with remaining tortillas, sauce and cheese.
  11. End up with olives
  12. Bake for 35 minutes.
  13. Let cool for 10 minutes for easier cutting.
