Philadelphia German Butter Cake

- Base of cake: shopping list
- 1/4 cup shortening shopping list
- 1 large egg shopping list
- 1/2 cup milk (I have used soy milk with great success) shopping list
- 1 Tablespoon vanilla extract shopping list
- 1/4 cup sugar shopping list
- 1/4 teaspoon salt shopping list
- 2 1/2 cups unbleached flour shopping list
- 2 1/2 teaspoons bread machine yeast shopping list
- Topping for cake: shopping list
- 1/2 pound unsalted room temperature butter shopping list
- 2 cups sugar shopping list
- 2/3 cup unbleached flour shopping list
- 2 large eggs shopping list
- 1/4 cup milk shopping list
How to make it
- Add cake base ingredients to bread machine in order listed.
- Start the basic cycle and let the bread machine do the work for you!
- Following the second knead, remove the pan from the machine and let it rise on your counter for about an hour.
- Don't worry if it doesn't double in size - it will work.
- While the dough is resting, make the topping.
- Cream the butter.
- Mix the flour and sugar and add to butter gradually, mixing in before adding more.
- Add eggs one at a time and mix thoroughly.
- Add milk and mix.
- Preheat oven to 375 degrees F.
- Press dough into a the bottom and up the sides of a 9x13 baking pan. (don't use one with very low sides, as it may rise in the oven a little too much and your topping might overflow the pan - can you tell I did that once?)
- Prick the dough with a fork.
- Spread topping over base and bake for 25-30 minutes.
- It is done when the top looks a little crusty, but still gooey in the middle.
- Let cool before serving, it will sink and look weird, but will be delicious!
