My sister gave me this one several years ago. Use it like you would any salsa with crackers, chips, etc. Give it a couple hours + + to marinate for fullest flavor. This can actually be a downright satisfying meal on a hot summer day!

Ingredients
  • You can either chop all these with a sharp knife or use a food processor to make this go really fast!
  • 3-10 fresh & ripe medium to large tomatoes (yummy option: chop up those tiny sweet cherry tomatoes for an even bigger burst of flavor)
  • 1 bunch green onions, finely chopped, or one large onion of your choice (vidalia, white, yellow, purple)
  • 1 clove garlic, finely minced (the garlic flavor grows stronger as it marinates)
  • 1-2 small cans chopped green chiles or use fresh hot peppers (you choose the heat level you like best)
  • 1 large handful of fresh parsley, minced
  • 1 large handful of fresh cilantro, minced
  • 1 large bell pepper, diced (orange or yellow looks & tastes great)
  • 1 large seedless cucumber, diced
  • 1 tsp. chili powder
  • 1 bag frozen salad shrimp (or 2+ cans salad shrimp; you can also use larger shrimp, just cut them into small pieces)
  • 1-2 limes
  • shredded cheddar cheese
  • crackers, tortilla chips

Directions
  1. All ingredient amounts are general: This is a recipe that you adjust to your taste. I purposely left out any traces of salt, since the crackers and chips have more than enough for our tastes. Add salt if you like it better.
  2. Put cheese in serving bowl and chips/crackers on a plate or in baskets for serving.
  3. Put all chopped vegies & chili powder in mixing bowl; Cut limes in half & squeeze juice into the mixture. Add thawed shrimp and stir till blended. Refrigerate a couple of hours (good) or overnite (best) so all the ingredients blend and soak up the flavors.
  4. How To Eat It : scoop salsa with cracker or chip, sprinkle cheese on top and chomp.
