This is a trifle recipe made with bananas. If you want to skip the homemade custard step then just use 2 large boxes of Jello vanilla pudding. I prefer the old-fashioned method though.

Ingredients
  • 1 12 oz. box vanilla wafers or lady fingers
  • 3 ripe but not too ripe bananas, sliced
  • 1-1/2 cups sugar
  • 4 Tbsp. cornstarch
  • 3 - 4 eggs, whisked
  • 1/4 teaspoon salt
  • 8 cups milk - I prefer homogenized
  • 1 Tbsp. pure vanilla extract
  • Garnish: Sugar cinnamon for sprinkling on top and fresh berries when in season.

Directions
  1. Layer vanilla wafers then sliced bananas, vanilla wafers and sliced bananas in a large serving or trifle bowl.
  2. Blend all other ingredients in a large heavy sauce pan.
  3. Whisk well as the pudding will become lumpy if you don't.
  4. Over medium-low heat, cook until mixture thickens.
  5. When hot and thick pour over layered vanilla wafers and bananas.
  6. Place in the refrigerator and cool for at least 1 hour.
  7. I like to garnish the top with sugared cinnamon.
  8. Note: I have also prepared this dessert by using Jello Vanilla pudding and pie filling and adding 2 cups of Cool Whip to it.
  9. Either way this is a delicious dessert!
