Margarita Beef Recipe
A twist on citrus marinated steak for the grill. The marinade tenderizes and flavors the meat. You get steak and a cocktail in one dish!

Ingredients
  • 1 1/2 pounds beef, cut of your choice (1-inch thick)
  • 1/2 cup tequila
  • 1/3 cup fresh lime juice
  • 2 tablespoons peeled chopped gingerroot
  • 1 tablespoon olive oil
  • 1 teaspoon dried whole oregano
  • 1/4 teaspoon salt
  • 1/8 Teaspoon ground red pepper
  • 1 (6-ounce) can frozen orange juice concentrate, thawed, and undiluted
  • 2 cloves garlic, crushed
  • Vegetable cooking spray

Directions
  1. Trim fat from steak; combine steak with next 9 ingredients in a zip-top heavy-duty plastic bag. marinate in refrigerator 8 hours, turning bag occasionally. Remove steak from bag. discard marinade.
  2. Coat grill rack with cooking spray and heat the grill to medium-hot. Place steak on rack; cook 5 minutes on each side or to desired degree of doneness.
