Ingredients

1 1/2 pounds beef, cut of your choice (1-inch thick)

1/2 cup tequila

1/3 cup fresh lime juice

2 tablespoons peeled chopped gingerroot

1 tablespoon olive oil

1 teaspoon dried whole oregano

1/4 teaspoon salt

1/8 Teaspoon ground red pepper

1 (6-ounce) can frozen orange juice concentrate, thawed, and undiluted

2 cloves garlic, crushed

Vegetable cooking spray

Directions

Trim fat from steak; combine steak with next 9 ingredients in a zip-top heavy-duty plastic bag. marinate in refrigerator 8 hours, turning bag occasionally. Remove steak from bag. discard marinade.

Coat grill rack with cooking spray and heat the grill to medium-hot. Place steak on rack; cook 5 minutes on each side or to desired degree of doneness.
