This is a wonderful soup for a cold winter day! Or any time you want something alittle hot and spicy! I love chicken with just about anything - so why not a chicken chili?!?!

Ingredients
  • 4 (16oz) cans Northern Beans
  • 2 Medium onions
  • 1 Tbsp olive oil
  • 3 (4.5oz) cans green chiles, undrained
  • 4 cloves minced garlic
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 6 cups chicken broth
  • 5 cups cooked, chopped chicken breast
  • 3 cups shredded pepper jack cheese
  • 1/2 tsp pepper
  • 1 cup chopped fresh cilantro

Directions
  1. Saute onions in skillet with olive oil on med-high heat until tender
  2. Add green chiles and next 3 ingredients
  3. Cook 2 minutes, stirring constantly
  4. Add beans, broth, and onion mix in large soup kettle with chicken and simmer
