Barley Salad

- 1 1/2 cups medium barley shopping list
- 1/3 cup minced fresh parsley shopping list
- 1/4 cups chopped green onion shopping list
- 1/4 cup fresh lemon juice shopping list
- 1/2 cup vegetable oil shopping list
How to make it
- Boil barley in 2 quarts salted boiling water for 15 minutes, or until barley tender. Drain in a colander. Set colander over a saucepan of simmering water, steam barley covered with a towel and a lid, for 10 minutes, or until fluffy and dry. Transfer barley to a serving bowl and let cool for 20 minutes. Stir in the parsley and green onions.
- In a bowl, beat the lemon juice and the oil with salt and pepper to taste and toss the salad with the dressing while the barley is still warm.
- Chill the salad for at least 1 hour or overnight.
