Ingredients
  • 1 cup "all bran" cereal
  • 1 1/3 cups fat free milk
  • 1/4 cup "smart balance" oil or extra virg. olive oil
  • 1 teaspoon vanilla
  • 1 egg or 1/4 cup egg beaters
  • 1 cup packed brown sugar
  • 1 cup Fat Free Baking Mix (see recipe)
  • 1 cup unsweetened baking cocoa

Directions
  1. Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  2. Mix cereal and milk together in a medium sized mixing bowl.
  3. Let mixture sit for 3 to 15 minutes.
  4. Stir in the applesauce (see Fat Free Baking Mix recipe) and all liquid ingredients.
  5. Fold in the dry ingredients, one at a time.
  6. Divide batter evenly among muffin cups.
  7. Bake 16 to 19 minutes or until toothpick inserted in center comes out clean. Remove from pan immediately.
  8. If you count calories - 188 cals and if you count WW pts - 3 pts per muffin.

I've made these before they are surprisingly good.






Yes they are moist, but if you want a little more moisture or if they seem a little too rich then reduce the cocoa powder to 3/4 cup.
